Three ways to keep ginger fresh
You have finally managed to buy some juicy ginger with no signs of wilting or mould, but it only lasted two or three weeks in the fridge and then it goes mouldy and rubbery anyway. Is there anything you can do about it?
How to choose high quality ginger
To make the most of this wonderful herb only buy the freshest rhizomes. You should not smell any unpleasant aroma, and the entire surface of the root should show no signs of damage. Further, the skin should not have any scales and it should be light or dark yellow.
If you see sprouts that means that the root was already stored for rather a long period and it is not sufficiently fresh and therefore contains reduced amount of essential oils and nutrients.The trick is to plant it in a flower pot, put it on a windowsill and grow your own ginger. Easy, right?

Storing ginger in the refrigerator
You may store fresh ginger root in your fridge where it should last for about 2 weeks. That is, if you purchased a fresh one. Cut the root and wrap a damp cloth around it and put it in the fridge. This way the root will keep vitamins and beneficial properties. You will also extend the shelf life of the root by about 7 days. Do not peel ginger before or during storage, as all the vitamins reside under the skin.
Do you want to store ginger even longer?
Storing ginger in the refrigerator is a very convenient way, but for even longer storage times you need to use the freezer. Here is how. Cut ginger into thin slices and put them in a box. You will lose a great deal of nutrients by freezing though. Try to use ginger within six months.
