Sage – a forgotten treasure of our grandmothers
People have been using various herbs for ages and one of the most popular herb used to be Salvia officinalis or sage, mint or lemon balm. Great-tasting teas and summer lemonades are made from lemon balm but they are also part of many cooking recipes. In short, we cannot do without herbs in the kitchen.
Tea is usually made from sage, but hot teas are not that popular in the summer. But what about making a healthy syrup from sage and still get the healing effects of sage? Here is how to do that. Do not worry, it is easier than you think.
Ingredients to make 7 decilitres of syrup
High-quality ingredients are very important. You can use other ingredients too, but you need to maintain proper ratio between individual ingredients to make sure that your syrup will taste right and have the right consistency and strength.
- sage shoots – about two large handfuls
- 0.6 l of water
- 0.5 kg cane sugar
- two lemons
- 1 teaspoon of citric acid

Recipe
Boil sugar and water. Add washed and chopped sage and bring to a boil. Cut the washed lemons into slices and add slices to the pot. Cook for a while but use low heat. The mixture should bubble slightly. The goal is to release and blend all flavours and active substances together.
Set the pot aside, let it cool and put it in the fridge overnight. The next day, add a teaspoon of citric acid and boil the mixture again. When done, strain the hot syrup into a clean glass bottle and close it. Syrup made in this way and stored in a dark and cool room will last for several months. Do not forget to close the bottle tightly. Use only the amount you need and close it.
