Roasted pumpkin seeds – a tasty treat
Roasted pumpkin seeds taste great. You can enjoy roasted seeds as a snack alone or in salads and baked goods. If you feel like experimenting, you can add a lot of different flavours too. Whether you carve pumpkins or not, you will have pumpkin seeds and it would be a pity to throw them away. They are not only tasty, but also healthy as they contain a lot of vitamins and minerals. Pumpkin seeds are also a great source of fibre. Pumpkin seeds sold in stores are inexpensive, but it is always better to make your own.
Which seeds are best?
Small or medium size seeds are best for roasting as the large ones may be a bit too hard, but if you do not mind, you can cut them in half, for example. In general, all seeds are suitable for consumption, so do not go crazy trying to separate them. Seeds are usually white (with the skin) or dark green (the inside part). Green seeds have already been peeled so, you just eat them… If you have unpeeled seeds do not peel them. It is not worth it. It would take a long time to peel them all.

Before roasting
First, you need to clean the seeds from any remaining pulp or flesh. Pull them out of the pulp by hand and put them in a strainer and rinse under a stream of cold water. Some of the pulp should come loose but you need to remove the more stubborn flesh too. You can get rid of the remaining pulp through cooking. Bring salted water to boil and cook for 5 to 10 minutes. Use large pot with little water. When done, drain the seeds and dry on a kitchen towel.
Roasting pumpkin seeds
When all seeds are dry, pour a little oil and salt in, and if necessary, you add some spices. Spread seeds on a large baking tray – try to make nice single layer and bake at 180°C for about 10 minutes. Choose spices according to your preference. You can use hot peppers, chili spices, cumin, a little cane sugar and even honey. But just salt and pepper will do very well.
