Quince a very interesting fruit, but how should you use it?

Quince

Quinces have been used for a very long time but unfortunately, it looks like we have forgotten about it and that is a shame because you can grow quince even in colder climates. Quince fruit cannot be eaten raw, but it is added to various fruit jams because it contains a large amount of pectin, which makes jams thicker naturally so, you do not need to add gelling sugar or other chemicals to fruits that contains too little of it.

Quince is a medicinal plant

Yes it is. Quince was used in the ancient Greece as a source of energy during travels for example, because the fruit contains plenty of vitamins and trace elements, especially iron. Quince fruit also offers antiviral and antioxidant properties making it a great candidate for various tinctures, which are then used to support the immune system, and to support body’s resistance to pathogenic organisms and thus to improve the overall well-being.

Use ripe fruit only

If you want to make anything from quince, you need to select ripe fruit only without any signs of rot or mould. We bring you a recipe that uses sugar, but you can use honey instead. In case of honey use about one third less, then the amount of sugar. For example, 450 g of sugar corresponds to 300 g of honey. You will also need a strong alcohol such as vodka or plum brandy. The production takes a very long time – it can take up to half a year! Just letting you know before you start…

Tincture

You need approximately 1 kg of ripe quinces. Wash the fruit thoroughly and cut it into quarters. Remove the seeds and chop or grate the pulp and put it in a three-litre container. Pour in the alcohol. You will need 1 l. The fruit must be fully submerged. Close and store in a cool and dark place (in a dark and cold cellar or in your refrigerator) for 20 to 25 days. When done, add 300 g of sugar (or 200 g of honey), mix well and store it again in a dark and cool place, but this time for 7 to 10 days. When done, strain the liquid using a fine cloth (squeeze out as much liquid as possible) and you are done. Start using it immediately.
