How to preserve your harvest over the winter? If you want to preserve taste and freshness for as long as possible, follow these following rules. The first very important step includes thorough washing and drying and the next very important step is to keep the right temperature in the storage room.

Cellar

Never store root vegetables dirty. Try to clean roots as much as possible. If necessary, wash roots and put them aside and let them dry thoroughly. You must get rid of excessive moisture, because moisture has a big and negative impact on crop preservation. Only store the roots. Get rid of the greens.

Put carrots in wooden crates and take them to the basement. Fill them with sand or sawdust. These materials will keep carrot fresh longer. Make sure to place crates approximately one meter above the floor. You do not want them to get to cold. If you do not have crates, use potato sacks instead, but place them on a wooden mat. Do not tie sacks or bags too tightly. Let them breathe. You do not want any unnecessary moisture inside and cause problems.

Storage temperature

The optimal air temperature for carrots ranges from 0 to + 5° C and the maximum humidity should not exceed 90%. Strong air circulation or breeze may be harmful, so ventilate carefully. Here is one clever trick that you should try to get even better results.

Storing carrots in sand and ash

Place carrots in potato sacks or wooden boxes without holes and cover them with a mixture of sand and ash. Mix both ingredients in 1:1 ratio. The sand takes care of excess moisture, and ash has antibacterial properties and can handle even rotten carrots that may have gotten inside your box.
