How to make sure that your grilled corn is the best

Barbecuing or grilling seems to be the main activity in the summer and grilled corn is a big part of it. Barbecue is not only about meat and if you have friends who are not particularly keen on meat, grilled corn is a great choice. Even the harshest critics (your children) will enjoy corn if done right. They will not protest and finally eat some vegetables… You can serve corn as a side dish or as a main course…

Before grilling

You need to precook corn before you throw it on the grill. You do not have to peel it though. Put corn with leaves in a pot and bring it to boil. Boil for 10 minutes. If you do not want to pre-cook, you can wrap corn in aluminium foil and put it directly on the grill. The grilling time should be no less than 30 minutes. Corn needs time and there is no way you can speed it up.

Corn and butter

One of the easiest recipes ever: all you need is corn, butter and salt. Do not peel the pre-cooked corn, just open its leaves and spread butter on the inside. Wrap the leaves again and grill for another 10 minutes. Then unwrap and serve.

Corn with herbs

Corn also works well with some herbs. Mix 50 g of butter and 1 tablespoon of honey and let it melt on the grill. Then mix in 2 crushed cloves of garlic, 1 handful of chopped chives and 1 handful of chopped parsley. Let it sit for an hour. Wrap the corn in an aluminium foil and grill for 30 minutes. Brush with the herb butter before serving. Add salt if you like.

Corn in Bacon

You can offer this recipe to carnivores. Take a brush and drizzle pre-cooked corn with ranch dressing and wrap in a slice of bacon. Grill in foil for 10 minutes.

Corn with basil pesto

Grease pre-cooked corn with basil pesto. Wrap in foil and grill for 10 minutes. Sprinkle with freshly grated parmesan before serving.

Corn with sugar

Sugar will create a nice crust around the corn cob. Simply brush pre-cooked corn with oil and grill for 5 minutes. Get a bowl and mix 3 tablespoons of cane sugar, 1 teaspoon of cayenne pepper, salt, pepper and 50 g of butter. Dissolve but do not boil. Grill the corn for another 5 minutes while brushing it with the prepared sugar sauce. The corn will get a beautiful darkish to golden colour crust.

Additional flavouring of corn

Grill first and then sprinkle or decorate it the following ingredients:

  • spread BBQ sauce around and sprinkle with crushed chips (big wavy chips are best).
  • spread a thin layer of mayonnaise and sprinkle with cheese, chili spices and coriander. Serve warm with a lime slice.
