Get a whole, healthy looking eggplant without unsightly spots. Otherwise you need to cut them out and that is not good. Wash it, dry it and pierce it with a fork.

Heat the oven to maximum and put the eggplant in. We recommend placing eggplant on a baking paper. Bake for about 40-45 minutes until the skin is completely black. Blackened that is, not burned. You need to be careful. It must be fully baked though. When done, peel the skin off and you should have a fully baked eggplant for your spread. It should have a nice smoky and delicious taste.

A slightly different situation is when you need to bake eggplant and serve it cut – as a portion. So, cut it in half and remove the green stem.
